Black Velvet Whoopie Pies

Black Velvet Whoopie Pies

Yield: about 24 whoopie pies

Ingredients

  • ½ cup butter, room temperature
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg
  • ½ cup cocoa, sifted
  • 2 1/3 cups all purpose flour
  • 1 cup milk
  • 1 tablespoon black food coloring (optional)

Instructions

  1. Preheat oven to 350ºF. Line baking sheets with parchment paper.
  2. In a mixing bowl, beat together butter, brown sugar, baking powder, baking soda, salt, and vanilla extract.
  3. Beat in egg until smooth. Stir in cocoa until combined. Alternately, add flour and milk until combined. Stir in black food coloring.
  4. Transfer batter to a piping bag. Pipe 1 tablespoon sized mounds onto the baking sheets. With a damp finger, lightly pat the tops of the cakes to flatten any peaks.
  5. Bake 8-10 minutes until the cakes are firm to touch. Remove from oven and cool for a few minutes and transfer to racks to cool completely.
  6. To assemble, pipe buttercream filling between two cookies. Store in the refrigerator.

Yield: about 2 cups

Ingredients

  • 10 tablespoons butter, room temperature
  • 1 ¼ cups powdered sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream
  • 1 tablespoon orange food coloring (optional)

Instructions

  1. In a large mixing bowl, whip butter over medium-high until smooth. Add powdered sugar and salt. Beat until smooth, about 1 minute.
  2. Mix in vanilla, heavy cream, and orange food coloring.
  3. Whip on medium-high for about 4 minutes, scraping down the sides periodically.
  4. Transfer to a piping bag.
