Lemon Glazed Blueberry Doughnuts

Lemon Glazed Blueberry Doughnuts

Yield: 1 dozen

Ingredients

  • 1 cup plus 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons vegetable oil
  • 1/2 cup fresh blueberries
  • Lemon Glaze
  • 1 3/4 cups of confectioners sugar
  • 1/4 cup of lemon juice
  • zest of one lemon
  • 1 teaspoon salted butter, melted

Instructions

  1. Preheat oven to 350F. Grease doughnut pans and set aside.
  2. In a large bowl, combine flour, baking powder, salt, and sugar.
  3. Stir in egg, milk, vanilla extract, and oil. Gently fold in blueberries.
  4. Spoon batter into greased doughnut pans. Bake for 10 minutes until tester comes out clean.
  5. Allow doughnuts to cool. Remove from pan.
  6. To make the lemon glaze, in a separate bowl, whisk together confectioners sugar, lemon juice, zest, and butter.
  7. Dip cooled doughnuts into lemon glaze. Set aside to set.
